The Massachusetts Chapter of ICES is pleased to present the inaugural launch of Chef Dominic Palazzolo’s Master Mold Making Seminar and Hands on Class in conjunction with our Summer Weekend of Sharing June 26–27, 2010. This class has never been offered anywhere before.

Master Mold Making Hands On Class (Saturday, June 26)

During an all day class on Saturday, June 26, Chef Palazzolo will be bringing to the table all his tips and tricks for making every type of mold imaginable. This is an invaluable skill for the modern sugar artist as these molds can be used with fondant, gumpaste, isomalt, poured sugar, chocolate, and pressed sugar. To have the ability to transform your designs into reality at your finger tips is worth the time to master these easy skills.

Dominic will be using his three mold making solutions: Silicone Plastique, Silicone Spread, and CopyFlex Liquid. Each of these products give professional, reusable, lasting, food grade molds.

Making Molds for Gems (Sunday, June 27)

On Sunday June 27, Chef Dominic will be teaching Making Molds for Gems. Chef Palazzolo will teach you how to make molds to create the hot new item for cakes—gems! Add some bling to your cakes with these great reusable molds. Learn how to cast isomalt in your molds to create stunning gemstones and jewels for your cakes.

MassICES Day of Sharing (Sunday, June 27)

For our MassICES Day of Sharing on Sunday the 27th, Chef Palazzolo will share with us his new technique of creating 3-D lace using his newly developed line of molds. This new technique will debut at our meeting. Dominic will be vending his products both days.

Wedding Cake Challenge (Sunday, June 27)

Our member demo will feature Paula St. Pierre showing how to paint lace techniques on fondant. We will have a special vendor demonstration by Somerset Industries, the manufacturer of fondant sheeting machines. PLUS it’s the Annual MassICES Wedding Cake Challenge where randomly selected teams of three will compete to create a three tiered wedding cake in under 1 hour using all the goodies in a “Mystery Challenge Bag.” Last year this was a great success. Everyone had a wonderful time whether watching or participating. This is our blow out end of the year meeting with a fantastic brunch buffet and wonderful demos. Lombardo’s is truly a treat and very easy to get to. Don’t miss out!

Location and Accommodations

All events will take place at Lombardo’s, 6 Billings Street, Randolph, MA. This facility is located 20 minutes south of downtown Bostonright off Routes 128/93.

We have a block of rooms available for this event at the Comfort Inn at 1374 North Main Street, which is located next to Lombardo’s. Please contact them directly at (781) 961-1000 and tell them you are with MassICES. The room rate will be $99 for the 25-26. This is a savings of $30 off their regular room rate. They also offer free shuttle service to the Quincy Adams T station which will take you into Boston.
